El vinagre tamponado ACETIPRO™ (buffered vinegar) representa una solución técnica avanzada para la conservación del salmón ahumado, actuando como conservante natural con efecto antimicrobiano contra Listeria monocytogenes y otros microorganismos patógenos o alterantes.

 

A diferencia del vinagre convencional, su naturaleza tamponada permite regular el pH de forma más estable, evitando la acidez excesiva y preservando las características organolépticas del producto.

    MAIN APPLICATIONS OF ACETIPRO TM
     
    Preservation:
    It helps to control the growth of harmful bacteria, such as Listeria, E. coli, and Salmonella, thereby extending food shelf life and enhancing food safety. 

     
  • Acidity Regulation:
    It serves as a more moderate acidity regulator compared to strong vinegar, which is beneficial in certain foods where a high level of acidity could negatively impact flavor or texture. 
     
  • "Clean Label" Alternative:
    It provides a natural-origin alternative to synthetic preservatives and other acidifiers in food products, especially for products marketed with natural ingredients. 
     
Applications
Buffered vinegar is permitted for use in a range of foods under the European Union E-number E 267, including: 
 
  • Mozzarella and other fresh cheeses
  • Canned or bottled fruits and vegetables
  • Certain Fish and Fisheries products
  • Fresh and pre-cooked pasta
  • Certain bread types (mainly traditional)
  • Meat preparations (in a number of applications)
  • Seasoning blends, etc.
